How To Make Fish Balls or Filipino Bola-bola

Ingredients:
1/4 lb minced fish - snapper or your choice
1/4 cup chopped shallots
1/4 cup grated carrots (about 3 in)
1/2 cup chopped bella mushrooms
1/3 cup bread crumbs
1/2 tsp ground ginger
1 tsp chives (I used the dried)
ground pepper
salt
1 tsp fish sauce
1 egg white
1/2 tsp granulated sugar
1 tsp cornstarch
white wine (optional)
cooking oil

How To Make Pichi-Pichi or Pitse. Sweet Cassava Cake - My Pitsi Pitsi

http://mercifulg.blogspot.com/ Pichi-pichi or pitse is an easy to make Filipino dessert recipe made of cassava. Also called yuca, mogo, manioc, mandioca or plain kamoteng kahoy from my native country, the Philippines. In America, it's the source of tapioca. The dish needs very few ingredients and cooked in very short time. All you need are grated cassava, coconut milk, granulated sugar and some butter.  Fry until brown, blend with some granulated sugar and some coconut milk and once cooked, coat them with freshly grated coconut. And that's it. Serve with hot green tea and yes, you feel like you're back in the tropics. Old-fashioned dessert that my dear mother shared to me and I believe the first dish I learned to cook. Try them now.  I bought them for 99 cents a pound but maybe more in your store but am pretty sure a lot less in other countries.  It is not an expensive dessert as it seems you can share one tube into 6-8 servings. In this video, I cooked only half of the tube. I'm amazed on how pearly white these crops are. Just like gift from heaven.

How To Cook Good Pansit

http://mercifulg.blogspot.com/ Cook the famous pansit bihon of Philippines. Very tasty rice noodles dish sauteed with fresh vegetables. Serve as side dish or meal by itself. Serve with lumpia shanghai, bbq pork on the sticks,  sweet and sour pork,caldereta or whatever you want. I added the veggies of my choice but typical vegetables for pancit are cabbage, carrots, celery, onions, green beans, etc. 

Another easy recipe, the pancit or panseet or pansit or rice noodles for you. There won't be enough for me as I love them too. I alternated other ingredients with greens that I love.  Instead of using cabbage, I used bokchoy and added leaves of spinach. Instead of chicken, I used turkey meat or the cutlets.  Very tasty especially if you add some fish sauce and a squeeze of lemon or lime. I cooked and fried the noodles ahead with half-a-can of the chicken broth, set them aside.  Wait for the meat and the veggies to cook then add the noodles as this saves the vegetables from overcooking.  Can be served as a side dish or a meal by itself. Try them. Don't forget my lumpia shanghai.

Ingredients:

1 clove garlic, chopped to small pieces
1/4 quarter of onions, sliced
2 in carrots, julienned
6 green beans, french-cut
1 in of celery, sliced
1/4 cup shrimps
1/4 lb turkey cutlets, cut to small pieces
1/4 cup bokchoy leaves, chopped
1/4 cup spinach leaves
1 can of chicken broth
1 packet of chicken bouillon seasoning, use   only half
1 green onion -chopped to about 1/2 inch
1 bag or rice noodles, use half only
1/2 cup of olive oil
1-2 tbsp soy sauce
anatto seed extract - optional
1 tsp freshly ground pepper
1 tsp fish sauce - optional

The Rice Noodles, soak them in luke warm water for 2 minutes to soften.
  1. Heat the pan to medium heat and add 1/3 cup of oil.
  2. Stir and cook for about 5 minutes and set aside. Add more oil if needed. Put 1/2 of the chicken broth.
  3. Remove the noodles and transfer to a plate.
  4. Clean your work or skillet.
  5. Add the garlic, onion and the turkey cutlets.
  6. Once the meat are done. Add the shrimps.
  7. Add half of the green beans, add the carrots and celery.
  8. Add the rice noodles.
  9. Add the bokchoy and then the spinach leaves.
  10. Make sure the heat is on high. Add the soy sauce.
  11. Add the freshly ground pepper.
  12. Add the the fish sauce. Stir
  13. Serve. Topped with cut green scallions and lemon or lime on the side. Squeeze the lemon or lime on top.....Eat.
