How To Make Sweet Fried Plantains

Very simple and easy dessert to make anytime.   Compared to regular bananas, plantains are much starchy and made for baking, grilling or frying. I never tried them baked or grilled but no doubt, these fruits are great no matter which way you make them.

Simple ingredients such as pure cane sugar, cinnamon and cooking oil.  Peel and fry, slice diagonally, fry in the medium-high heat, wait until done and roll them good over cinnamon and sugar mixture and serve. 

Recipe correction:  2 tsp or 1 tbsp of cinnamon, not 2 tbsp as noted.

How To Make Fried Rice

www.mercifulg.blogspot.comLearn how  to make quick fried rice recipe with the the famous Spam canned goods.  Filipinos love receiving these canned goods thru "balikbayan box"  because they can make variety of dishes out of one can, so who wouldn't? And yes, the canned corned beef too.  I learned that they are favorites of Hawaiians too!  They're made with  pork meat mixed with preservatives then canned commercially by Hormel Food Corporation. Have you tried making fried rice with them?  I use the dish as side dish for dinner or even for breakfast!  Serve with fried eggs, sausage or bacon.  I understand there are plenty of salt in canned goods, so with my Spam, I prepared them by rinsing the sliced ham before frying and when it slightly dried up, I rinsed them again. The flavor stays but lesser salt for me.

Ingredients/Preparation
1 clove of garlic - Smash and chop finely.
2 tbsp of red onions - Chop finely.
2 cups of cooked brown or white rice 
1 tbsp of spring onions
1 tsp chili pepper flakes (optional)
1 tbsp soy sauce
1 tbsp frozen peas (optional) You may add mixed bell peppers if you prefer.
1-2 oz slices of Spam  - Rinse then fry.  Once slightly brown, rinse again.
1 tbsp olive oil ( you may use your favorite butter)

Directions:
1.  Heat the pan or wok to medium heat.
2.  Pour the olive oil.
3.  Saute the garlic, onions and spring onions. Stir for about 2 minutes
4.  Add the chopped Spam. Stir.
6.  Add the rice. Stir to incorporate. You may add more oil or butter if it's dry for your taste.
7.  Add the peas. Stir.
8.  Add the soy sauce. Stir.
9.  Add the chili pepper flakes or Hot Chili Oil Stir.
10. Stir all the ingredients for 5-7 minutes to incorporate.
11. Serve as a side dish or meal.

How To Make Cinnabon


Cinnabons by Pillsbury, currently cost $1.88 in our big box store. Cinnabon is one of my favorite fast food place.  It's the bakery fast food joint that makes cinnamon bread rolls with tasty frosty topping right in front of you. And you would be fortunate if you have the store close-by.  Since, we're not, I made one made by Pillsbury. And, reduced fat cinnabon too! 130 calories per piece.

Open the box, bake as instructed, 375 degrees F for about 15 minutes. Spread them out.  That's so easy. Has 8 cinnabons which makes it to $0.24 a piece

Once baked, dress them with the sweet frosty toppings.
Taste pretty good! I topped the others with dates.  Came out tasty too.
Has 130 calories on each one and saturated fat of of 2 grams. That's if you only eat 1. Thanks Pillsbury, that satisfies my sweet cravings for the day.

How To Make Chicken Stir-Fry With Frozen Vegetables

Prepare the following meal using frozen vegetables such as brocolli, carrots, cauliflower and mixed bell peppers when the fresh ones are not available.  Or for a fast, easy preparation, healthy and delicious dinner, buy the frozen. Frozen vegetables can be as nutritious as the fresh one since their vitamins and nutrients are preserved as soon as they were picked or harvested at their peak.  Do you think the farmers would let their crops spoiled? Unless these vegetables are growing in your backyard then of course, opt for the fresh ones. So, how about some chicken stir-fry for tonight?

Slice 2 cloves of garlic and 1/4 cup of red onions.  Fry in the medium to high heat.

Slice some chicken breast. I bought the boneless chicken breast. It was frozen, so I thawed them in the microwave for about 45 seconds.  The recipe used about 4 oz. Add to the pan or the wok. Stir until opaque or cooked.
1 cup of mixed frozen vegetables.  Above has brocolli, carrots and cauliflower and packed by VIP. You may use different brand. Add to the pan or the wok.  Stir.  Keep the pan or wok consistently hot.  Adjust the oven settings higher if needed.
Add 1/4 cup of sliced mixed peppers.
Add 1/2 cup of brocolli florets.
Stir them all together for 3 minutes.  Mix 1/2 cup of chicken broth with 1/2 tbsp of cornstarch or have 1-2 chicken bouillon as seasonings. Keep the heat consistent. Stir and cook for 1 to 2 minutes.  Add ground pepper and dash of salt to taste. You may add tbsp of soy sauce if you prefer.  I love spicy food, so I always add red chili pepper flakes on most of my stir fry.




Grab a nice white place and serve over a cup of white or brown rice. Serve with a slice of lime. Squeeze the lime over the whole dish and you are set for a quick tasty dinner.

How To Make Strawberry-Blueberry Pancakes - Quick and Easy To Make Breakfast


How To Make Quick Pancake with Strawberries and Blueberries On Top

Ready to eat pancakes in ten minutes. By using a simple pancake maker or waffle maker, I made  a mighty tasty easy to make breakfast today! 

The ingredients...
Buy a pre-mixed pancake that cook for less than 6 minutes, get mixed frozen fruit berries, honey, maple and butter.

How to cook:
1. Follow the pancake instructions, my recipe calls for two pancakes. 
2. Serve the berries frozen but my choice is to defrost  the frozen berries in the microwave for 1 minute then put over the pancake.
3. Add a teaspoon of honey. How about local honey?
4. Topped with a 1/2 tbsp of flax-oil butter.
5. Add 6-8 tbsp. of maple syrup or more if you prefer.
6. Sprinke some ground cinnamon.
7. Serve and eat.

Not very heavy meal. If you have time, cook a slice of Jimmy Dean sausage in the frying pan, cook well-done, drain well and serve as a side dish, but of course with some good tasty coffee and a glass of orange juice. 
Start with Hungry Jack Wheat Blends Pancake Mix.  Mix and cook as directed.

Lite Maple Syrup by Country Kitchen, reduced calorie syrup. 6-8 tbsp or more if you prefer.

Defrost 1/3 cup of mixed strawberries and blueberries mix. Microwave for 1 minute.

Top with 1 tspn local honey.  Soooo  good. .I need to get some more, but what happened to the bees? I've only seen few this year.

Topped with Buttery Spread with Flax Oil by Walmart. Surprisingly, non hydrogenated too.
You got to sprinkle with them with ground cinnamon.

Serve with a smile.
