How To Cook Beef Stew - Filipino Caldereta - American Beef Stew

www.mercifulg.blogspot.com How to cook caldereta. My Filipino to western beef stew version that I made out of real beef without the goat meat. Famous dish in the Philippines but usually made with goat meat. You can use the pressure cooker to have it ready in no time.   If you like spicy with rich flavor, try this one.

Ingredients:
1 lb beef stew meat, for this dish  I used the pot
roast meat
3 cloves garlic
1/2 cup onions, cut in cubes
1/2 can  of stewed tomatoes
1 carrot -chopped
4 small red potatoes, peeled
2 inch turkey sausage, sliced
1/2 cup of mixed fresh and frozen sliced peppers
1/4 cup peas
green beans - handful of frozen
6 tsp of Mama Sita's seasoning dissolved
in 1 cup water
3 bay leaves
1 tbsp of sweet yellow raisins
pinch of all spice ground
1 tsp of No salt steak seasoning - my fav
pinch of pepper flakes
2 tsb of freshly ground pepper
1/2 tsp of whole black pepper
2 tbsp of red wine - Lambrusco Riunite

Directions:
  1.  Fry the beef, until brown on both sides. Season with no salt steak seasoning.
  2.  Slice the beef into quarters, remove the fat and discard.
  3.  Fry the garlic, onions, sausage and carrots.
  4. Stir.
  5. Push the vegetables on the side to create a hole or space in the middle of the pan.
  6. Add the chopped meat.
  7. Once meat are brown, add the mixture of Mama Sita's seasoning
  8. Stir, cover and simmer for 45 minutes or until the meat are tender.
  9. Turn the heat up, about 425-450 degrees high. Add the bell peppers.
  10. Add the Reunite, Lambrusco red wine.
  11. Add the Sun Maid golden raisins. ( This is optional but taste great with it.) Other brand will work too.
  12. Add the 1/2 tsp of whole black pepper.
  13. Add the bay leaves, all spice ground seasoning.
  14. Add the red pepper flakes. Stir.
  15. Add the peas and the green beans.
  16. Cook for additional five minutes.
  17. Remove the bay leaves.
  18. Serve.  Serve over bed of rice or with baked potato and a roll.
Great when left overnight or as left-overs.  Eat with wine or beer as appetizers.  Frozen vegetables works great also. There are no salt added as  Mama Sita's seasoning has salt on it already.
